### Green Rooibos Energy Bites

**Ingredients**:

- 2 tbsp loose [green rooibos](https://earthley.com/ingredients/green-roobios-tea) tea (or 2 tea bags, opened)
- 1 cup pitted dates (soaked if dry)
- 1 cup rolled [oats  ](https://earthley.com/ingredients/colloidal-oatmeal)
- 1/2 cup unsweetened shredded coconut (texture – can substitute something else if desired – nuts, seeds, dried fruit, etc.)
- 1/4 cup almond butter (or peanut butter)
- 2 tbsp [honey ](https://earthley.com/ingredients/raw-honey)(or maple syrup)
- 1 tsp [vanilla extract ](https://earthley.com/earthleys-blog/diy-vanilla-extract)
- 1/4 tsp [cinnamon ](https://earthley.com/ingredients/cinnamon)
- 1/4 cup hot water – for steeping rooibos
- (Optional)1/4 cup [**Cocoa Calm**](https://earthley.com/products/cocoa-calm)

**Directions**:

**Step 1:** Pour 1/4 cup hot water (just off boiling) over the green rooibos in a small bowl. Steep 5 minutes—it’ll turn a pale golden-green. Strain, keeping the liquid. (Save wet leaves if you want green flecks and added chewiness.) Let cool slightly.

**Step 2:** In a food processor or blender, mix up the dates, rooibos tea, almond butter, honey, and vanilla until a sticky paste forms – about 30 seconds. Scrape down the sides as needed.

**Step 3: **In a bowl, combine oats, shredded coconut, and cinnamon.

**Step 4:** Add wet paste to dry mix. Stir well – hands work best. If using steeped rooibos leaves, chop (if needed) and mix them in now (optional). The dough should hold together when squeezed. If cracking, then add a little more of a wet ingredient. If it's too runny, then add a little more of a dry ingredient.

**Step 5:** Roll into 20 bite-sized balls (about 1 tbsp each). Wet your hands if it’s sticky. Roll half in extra coconut for a snowy look if you’re feeling fancy. Sprinkle freely with Cocoa Calm once balled (this will help prevent them from getting sticky).

**Step 6: **Pop in the fridge for 30 minutes to firm up. Store in an airtight container (fridge for 2 weeks, freezer for 2 months).
